Sunshine Salad

1 1/2 cups cooked elbow macaroni
1 cup sliced green beans
1/2 red capsicum, finely sliced
1/2 cup celery, finely sliced
1/4 cup chopped shallots
2 Tbsp mayonnaise
shredded lettuce for serving
Combine all ingredients in a large salad bowl and toss thoroughly. Chill until needed. Serve on a bed of shredded lettuce. Serves 2
